We have enabled our kitchens to flexibly adapt to the new demands of the new normal with some new customs:
Thermal screening of the kitchen staff: We practice our new custom of screening all our Kitchen Staff. The staff must get their temperatures checked before entering the kitchen and are regularly given a thorough briefing on safety procedures. Further, our kitchen staff is self-motivated to follow social distancing. We prepare and deliver our services in line with bio-security protocols.
Protective Equipment Kits: The signs of new normal are very crisp and white. Chefs, line cooks, dishwashers, servers, and runners are dressed in Personal Protective Equipment (PPE) kits with surgical masks, gloves, and face shields as and when required. Our kitchen staff and other crew members are determined to curate and deliver food with the utmost protection.
Fresh and sanitized vegetables: We promise to deliver a nutrient-rich plate with organic and fresh vegetables from farms. The fresh vegetables are sanitized first and then chopped with sterilized knives. We label and date our vegetables and seasonings for preparing healthy and palatable dishes.
More heat while cooking in the kitchen: We are fully equipped in the kitchen with how to keep microbes or other food infections at bay by providing heat or maintaining high temperatures of the food being cooked. Our kitchen crew constantly monitors the food temperature, use digital thermometers at every opportunity, and ascertains that it is hot enough to be safe for consumption.
Sterilized cutlery: We ensure constant sterilization of our cooking crockery and cutlery. The sharing of cooking crockery is very much minimized in the kitchen. Cutlery for the guests is sterilized first and then packed.
Hand washing is a regime: Our staff practices the new custom of washing their hands with running water every 30 minutes. Hand sanitizers are also placed nearby. Respiratory hygiene standards are followed in the kitchen. Sick kitchen personnel are issued sick leave. Further, we strictly follow the Standards of Operations in the kitchen and outside.
Cleaning and sanitizing the kitchen: We make sure that no food particles are spilled on the cooking surface or on the floor. Every 3 hours, our housekeeping staff does the mopping with broad-spectrum disinfectants. After cleaning, sanitization is executed. We maintain a proper record of cleaning and sanitization for risk-free dining.
